Giving the chicken a little crunch to the skin (or just browning the outside of a breast a LITTLE) sorta seals in the moisture and helps... <BR/><BR/>I also find that if I put chicken in at the beginning of the day, it's just too long and ends up a little dry... Maybe a low setting instead of high, or on mine, you can tell it to cook on low for 4 hours, and just keep it warm after that...
