Crockpot Tuesday

Here's this week's crockpot recipe. I'm really trying to make meals that include ingredients that I already have in the house. For this one below, I didn't have apple cider...but because I DO have a one year old i always have apple juice so I just used that.


Teriyaki Salmon

1/4 cup Teriyaki Sauce
3/4 cup Apple Cider
1 1/4 lb Salmon Filets
1/4 tsp Salt

Spray inside of crockpot with cooking spray. Pour the combined sauce and cider in crockpot. Put salmon in next-skin side down. Sprinkle the fillets with salt. Cover and cook on LOW for 3-4 hours, or HI for 1 1/2-2 hours. I served it over rice with some veggies I had already made. You could dump some frozen veggies in the crockpot for the last hour of cooking and make it really, really easy too.

It was pretty good. The salmon didn't really take on much of the teriyaki flavor, but I really like salmon so I was ok with that. I think I'd pierce the salmon or cut the filets in smaller pieces next time. I had it again for lunch today and it was just as yummy.

Wait, one filet or two?

it's 1 1/4 lb of filet, so however many filets you find to make that measurement. we had three filets that totaled just over 1.25lb.
